Traditional Otah is a grilled fish cake made of ground/minced fish, typically Mackerel, mixed with eggs, onions, coconut milk and spices. It is widely known across Southeast Asia, that the mixture is traditionally wrapped inside a banana leaf before steaming or for the grill. Very easy to make and very rewarding! Try your hands on our Otah Croquettes recipe, which we have collaborated with our resident chef –  Chef Mickaël to come up with several creative fusion recipes.

Ingredients: Chili, Garlic, Ginger, Turmeric, Candlenut, Raw Sugar, Himalayan Pink Salt, Coriander, Fennel, Cumin, Fenugreek, Cardamom, Black Pepper.

How To Turn Premix Spice Blend Into A Paste

Using a mortar and pestle or food processor, pound or blend 260g of chopped onions with 120ml water and 150g spice blend to achieve 530g of spice paste.

530g of spice paste serves to flavour approximately 1.2kg-1.5kg of fish or shrimps.

Store freshly made Traditional Otah paste frozen, thawed spice paste to be cooked within a week.

 

A Guide on How to Prepare Traditional Otah

Prepare:

260g Traditional Otah paste

6 tbsp cooking oil

700g minced fish meat

3 tbsp coconut cream

2 large eggs

1 tbsp sugar

Coconut leaf/Banana leaf (optional)

 

Directions:

1. On medium-low heat, stir-fry spice paste with cooking oil for 15 mins.

2. Allow spice paste to cool down before mixing with fish meat, coconut cream and eggs.

3. Wrap otah paste with coconut leaf or banana leaf, then steam or barbecue.
